Blue Tea - Butterfly Pea FlowerThe bright blue petals from the flowers of the blue butterfly pea plant have been used as an ingredient in herbal tea drinks throughout the region for centuries as well as used in cooking.
The Clitoria ternatea plant, also referred to as the butterfly pea, blue pea, Aprajita, Cordofan pea, blue tea or Asian pigeon wings, is a plant from the Fabaceae family and is commonly found throughout South East Asia.
One of the aspects of the blue tea or butterfly pea, is the fact that the liquid changes colour based on the pH level of the substance added to it, for instance, adding lemon juice to the tea will turn it purple.

- Brew time: 3 to 7 minutes (depending on how strong you want the colour)
- 1 to 2 teaspoons per cup
You only need about one gram of butterfly pea flowers to make a cup of blue tea and the flowers can be infused several times. On the second and third infusion, leave the flowers in the water for longer. Ten grams of butterfly pea should be enough to make about 30 cups of blue tea. The Butterfly Pea tea is also known as Nam Dok Anchan in Thailand and Vietnam, where the tea is usually mixed with lemon and honey. It is common for the tea to be served after dinner and when served cold, it is often mixed with passion fruit, honey, cinnamon, ginger and mint.
