Butterfly Pea Flower tea has a bright blue colour when infused and when the citrus juice of a lemon is added, the colour changes to a beautiful purple. The length of time for infusion will affect the colour, a long infusion and the colour becomes an inky indigo. The taste is usually described as earthy and similar to the flavour of unsweetened green tea.
